What you need to do is duplicate your theme’s single.php and archive.php and rename them to single-listing.php and archive-listing.php

This is how WordPress operates with custom post types.

Then edit your new files and follow the guide by adding the one line of code into those files.

Or take the existing single-listing.php and archive-listing.php from the plugin folder
/plugins/easy-property-listings/lib/templates/themes/default and edit them as the ones in your theme have extensive code that does not apply.
