Changing entry defaults

I’m wondering where I might find the documentation to change the defaults for an entry. For example on property, the ‘land unit’ default value of ‘square’ I’d like to default to ‘acre’. For ‘building unit’ I’d prefer ‘square feet’. Additionally, there are various spots where common labels in Australia aren’t quite the same in the US and I’d like to modify those, here and there.

Any suggestions would be appreciated.
